Japanese Cuisine Lecture and Demonstration by Mr. Yanagihara, Japan Cultural Envoy

 

On October 15, Japanese culinary specialist, Mr. Naoyuki Yanagihara gave a lecture “Washoku for all – What is Japanese Cuisine? – ” at La Cité in Ottawa.

 

Mr. Yanagihara is the Vice President of the Yanagihara School of Traditional Japanese Cuisine. His two week visit to Ottawa was sponsored by the Agency of Cultural Affairs of Japan in order to promote Japanese cuisine after it was added to UNESCO’s intangible heritage list. Since August, Mr. Yanagihara has visited New Zealand, South America and North America.

 

The lecture was attended by about 50 people including La Cité Culinary Arts students and the general public.

 

Mr. Yanagihara gave detailed explanations of the characteristics of Japanese cuisine and demonstrated how to prepare dashi, Japanese stock. Participants enjoyed learning more about the development of Japanese culinary culture and how it was influenced by Japanese climate and geography.

The lecture included demonstrations and videos.

 

 

Mr. Yanagihara brought along a 5-meter-long kelp from Hokkaido.

 

 

At the end of the lecture, participants were offered soup made with dashi
